The Instant Pot Duo Evo Plus is the latest and greatest in the Instant Pot line of pressure cookers. They’ve taken everything you love about the classic Instant Pot Duo, made some design improvements, and added several new features that I think you’ll love!
The moment we heard about the Instant Pot Duo Evo Plus, Barbara and I knew we had to get our hands on it. The product design team took feedback from actual users and redesigned the Duo based around the users’ needs!
Since Mom was out of town, I bought one and brought it home to test it out. And I liked it so much that I didn’t want to share it when she got back in town!

This Instant Pot Evo is a great pressure cooker. The handles make it easy to hold the cooking pot in place, and I love the redesigned lid.
At this point, the Instant Pot Duo Evo Plus is my first-choice recommendation for cooks new to pressure cooking.
What Is the Instant Pot Duo Evo Plus?
The Duo Evo Plus is the latest model of electric pressure cooker made by Instant Pot. It is currently available in the 6-quart and 8-quart size. (Right now, I can only find the 8-quart at Williams-Sonoma.)
It has eight preset buttons on the sides, and a dial you can use to set up to 48 customizable cooking programs. (Don’t get overwhelmed, though! The must-use buttons are the same as always: Pressure Cook and Saute.)
Many past models of the Instant Pot offered different button locations, additional presets, or tweaks to the lid, but all the machines operated really similarly. However, with this new Instant Pot Evo Plus, there are some major changes to the parts themselves.
What sets this model apart from past versions is that Instant Pot has redesigned this pressure cooker to include features that users have been begging for!

What Are the Specs for the Duo Evo Plus Pressure Cooker?
The Instant Pot Duo Evo Plus uses a sensor to toggle between 9.3 and 11.6psi on High pressure and between 4.35 and 7.25psi on the Low pressure setting.
The 6-quart Evo Plus is 1200 watts, 13 pounds, and 13.03″ × 12.68″ × 12.8″.
The 8-quart Evo Plus is 1400 watts, 15 pounds, and 14.37″ × 13.9″ × 14.2″.
What Comes with the Instant Pot Evo?
The Instant Pot Duo Evo Plus comes with one red and one clear silicone gasket. They recommend using one for savory and one for sweet. It also comes with a redesigned low steam rack with handles. If you want to use the rack but don’t want the handles up, you can fold them over flat and use it in your Instant Pot.
There are a large number of Instant Pot accessories available.
What You’ll LOVE about the Instant Pot Duo Evo Plus
You can really tell the Instant Pot team researched what people loved and what people struggled with and tried to fix the bad without disrupting the good. For the most part, I think they really nailed it!
Here are a few of my favorite features:
Redesigned Inner Cooking Pot
The Instant Pot Duo Evo Plus has a redesigned inner cooking pot with a flat bottom, handles, and a Tri-Ply stainless steel that can transfer to the stovetop. (It works on electric, ceramic, gas, and induction cooktops.)
I really love the handles—they lock the cooking pot in place, so you don’t have to hold it while you’re stirring. Plus, the stay-cool handles make it much easier to have a good grip on the pot when you remove it.
Redesigned Pressure Cooking Lid
The new Instant Pot Duo Evo Plus lid has some of my favorite changes on it. They added a pressure release switch so that you can release the pressure while keeping your hand a safe distance from the steam. In addition, they added a steam release cover that helps to prevent quick pressure releases from spitting liquids as happens with high starch foods. Less need for intermittent pressure releases!
The stream release cover has the added benefit of dampening the sound when using a quick release.
One problem I have run into in my kitchen when I am trying to get dinner on the table quickly is forgetting to make sure the pressure release valve is in the sealed position. Having moved to the switch with the Duo Evo Plus, they solved this problem. The switch automatically resets to the sealing position when you open the lid.
I also like it better than the quick release on the Instant Pot Max because I can easily switch it on and off for an Intermittent Pressure Release.
Updated lid fins. So the little lid holders that sit into the housing to hold the lid have been redesigned. They’re angled now and the holders have been moved from the sides to closer to the back. (Think 10 o’clock and 2 o’clock instead of 9 and 3.) This makes a big difference in keeping the lid out of the way when you’re stirring the pot.
Large Digital Display
Love the new display that tells you where in the pressure cooking cycle it is. It says preheating and shows you with progress bar how much longer it will take to preheat. The display is angled so you can more easily read the display without having to bend over to catch the light just right.
Expanded Bake Setting
The Bake setting has been updated to work more like the Pampered Chef Quick Cooker. It has a Proofing setting, a Cheesecake setting, and a Cake setting, PLUS an all-new DRY BAKING option. (More on that below.)
That’s right, YOU CAN BAKE FOOD without using water in the bottom of the pot. Just select a temperature just like your oven.
While I don’t often use presets, I really like the proofing option! (Check out Barbara’s Easy Homemade Cinnamon Rolls from Barbara Bakes. They’re perfect to proof in your Evo Plus.)
Updated User Manual
Instant Pot has really come a long ways here! The user manual for the Instant Pot Duo Evo Plus is clear and easy to understand. (the user manual is only available online; the machine itself just comes with a brief Safety & Maintenance guide and Getting Started Guide.)
The user manual differentiates between the various pressure and non-pressure settings and provides tips for getting the best cooking results.
One change to this manual from previous versions is that they specify the minimum cooking liquids for the 6-quart model is 1.5 cups of liquid. In our testing, we did not have any issues using recipes with only 1 cup of liquids (which is the specified minimum for other Instant Pot models).
The online manual provides lots of easy-to-understand instructions and illustrations and is text searchable.
Change Time and Level without Restarting
If needed, you can change the cook time and pressure level without canceling the process. Simply hold the center dial until it beeps. Spin the dial to change the cook time, or press the center once to adjust the pressure level.
What You Should Know Before Purchasing the Instant Pot Duo Evo Plus
If you have used any of the previous models of Instant Pot, there are a few things you’ll need to get used to.
New Start Button
Unlike previous models, you have to press the start button to get the pressure cooker going. (The original Duo starts on its own after selecting the function and setting a time.) This will be great for new cooks, but it’s another button to remember if you’re used to a previous model.
Attached Cord
I was disappointed that the cord is not detachable like it is in other Instant Pot models. (I like to detach my cords and store them in the pot to protect them.)
Fewer Accessories
The Instant Pot no longer comes with the rice cup, a rice paddle, or a ladle. Honestly, I don’t know anyone who actually used the rice cup, but I did like the ladle.
No Quick Cool Tray
The QuickCool Tray that’s talked about in the manual isn’t included with the pressure cooker and the Quick Cool Tray is now available to purchase. (Although for most things you’re cooking, a shortcut pressure release isn’t really necessary.)
While the sales page says the Evo Plus can cook up to 70% faster, keep in mind that 70% figure is compared to traditional cooking methods, not compared to previous Instant Pot models. In a side by side test with the classic Duo, the Evo plus did come to pressure 2 minutes faster when cooking my Pressure Cooker Spicy Chicken Soup the other day.
While it’s great to have the handles hold the pot in place, it also means that you’ll be unable to rotate the pan easily when sautéing. (For me, the trade off is worth it because I don’t have to hold it or worry about the pot spinning when I don’t want to.)
Saute Feature Issue
Sometimes when I use the Saute High setting, I get a burn notice or C8 notice. (Even though nothing has burned.) I’ve found it works best to not Saute on High; instead, I use Saute/Custom/Level 3 or 4, and I no longer get the error code. More info below in the error code section.
Center Dial
While I like the dial, Barbara has mixed feelings about it. She says “I like that the buttons are simplified, but I disliked the menu within a menu. It’s easy to get lost inside the menus until you’re familiar with it. You have to really watch to see what is flashing to see what menu you’re in.”
Warranty
The Instant Pot Duo Evo Plus has a 1 year limited warranty, but you have to register within 30 days of purchase to be eligible.
Dry Baking
It feels like you’re breaking the cardinal rule of pressure cooking when you use the dry baking option. I’m not sure I’m a fan yet. We followed the manual’s recommendations to the letter, but it took much, much longer for a pan of brownies to cook in the Evo than in the oven. We’re going to keep testing it and would love to hear if it works for you.
What Are the Default Times for the Preset Buttons
Nearly all of the recipes on Pressure Cooking Today use the Pressure Cook button on high pressure. When using the Duo Evo Plus we pressed Pressure Cook and then used the dial and adjusted the time on the Custom setting, which is listed first.

How to Turn Off the Sound on the Duo Evo Plus Instant Pot
Right after you turn on the Evo Plus and the display reads OFF, push the center dial until the little sound icon starts to flash. Turn the dial to switch the sound on and off.
Note that you can’t turn off the sound while a cooking function is enabled.
How to Use the Saute Function on the Instant Pot Duo Evo Plus
How to Use the Yogurt Function on the Instant Pot Duo Evo Plus
- Press the Yogurt button then turn the knob to pasteurizing and press Start.
- Across the top of the display are 3 sets of squares, the first set will begin blinking as it preheats. When that set switches to the second set – wait for the display to read HOT then it will quickly switch to the last set and read END.
- Open and check the temperature for reading of 180° (if not, close the lid and start it again to reach that temp).
- Move the Inner pot to sink to cool down to 110°-115°.
- Add the starter (temper if it was frozen) Whisk in well.
- Move the inner pot back to the IP.
- Push the Cancel Button, Press the Yogurt button TURN the knob to the ferment ( it will blink) and then press the Start button
- Display reads 08:00 and begins the fermenting/incubation stage.
- Leave it to incubate for 8 hours and then move the inner pot (covered) to the fridge for a minimum of 4 hours then (without scraping the bottom of the inner pot) pour the yogurt into the strainer and place back into the fridge for 8 hours or more.
What Do the Instant Pot Duo Evo Plus Error Codes Mean?
There are six basic types of error codes you may see on your Instant Pot Duo Evo Plus. The manual provides possible issues and solutions for each of the error codes (see pages 55–58 for more details.)
Why did I get a burn notice?
OvHt / BURN / FOOD BURN are all error codes that indicate burn notice for one of four reasons:
- the inner pot is not positioned properly inside the outer housing
- the temperature inside the pot is too hot
- the inner pot does not have enough liquid
- food deposits on the bottom of the inner pot may be preventing heat dissipation
The Instant Pot Duo Evo Plus automatically starts reducing the heat. If you’ve gotten the burn notice,
- Remove the inner cooking pot from the base.
- Check for debris inside the pressure cooker housing or on the outside of the stainless steel cooking pot. (Keep in mind that the cooker will be hot, so you may need to let it cool to thoroughly check.)
- Then remove the cooking pot from the housing, along with any ingredients inside the pot. If food has burned onto the bottom of the cooking pot, soak and scrub off the burned foods.
- Allow the pot to cool before pressure cooking again. Be sure to add more liquid to the pot and avoid ingredients containing thickeners like canned soups or prepackaged spaghetti sauces.

Other Instant Pot Duo Evo Plus Error Codes
The other error codes are quite rare:
C1, C2, C6, C6H, C6L: These five errors don’t specify what exactly is wrong, just that your Instant Pot may have a faulty sensor and that you’ll need to contact customer support at 1-800-828-7280 or support @ instantpot.com.
C7 or NoPr indicates that the heat element has failed, there is not enough liquid, or the quick release switch is set to vent position. If you get the error after checking the vent release valve and checking to make sure there is the minimum amount of liquid required for pressure, you would need to contact Customer Support.
C8 indicates that you have placed the wrong inner pot in the housing. (This is useful if you have an older model of Instant Pot with the domed bottom pan.) The pots are not interchangeable.
Additionally, my husband was sauteing on high and got the C8 error too even though we were using the correct pan. This happened several times. Since then I don’t use the Saute High setting on the Evo Plus, instead, I use Saute/Custom/Level 3 or 4 and it’s worked fine since with no error code.
Lid indicates that the lid is not correctly positioned. Simply open the lid and replace it, ensuring it is properly placed.
PrSE indicates that pressure has accumulated during a non-pressure cooking program. You will want to use the quick release vent to reduce pressure in the pot.

Is there an air lid for the Duo Evo Plus 6 quart model?
The Duo Evo Plus has just been discontinued, which naturally means it’s on sale everywhere. I just wanted to leave this one warning: do NOT use the Rice/Grains settings.
There seems to be a built-in delay of about ten minutes on the Rice/Grains setting between when the float pops up and when the timer begins, which means rice, oatmeal, etc. are wildly overcooked and stick to the pot. Just use manual pressure cook instead.
I just had the C7 error code but I figured out we hadn’t out the rubber seal on the inside of the lid and that as it. No more error
My question is regarding the customizable temperature as I would like to temper chocolate with the IP, among other things. Is it possible to choose Sous Vide (which allows for lower temperatures) and choose a temperature with precision in 1 or 5 degree increments, or mist one choose one of the LE presets. Ideally, I would like to choose 29-30 degrees to about 45 degrees.
Hi Alexandra – on the sous vide setting the lowest temperature is 77 degrees F which is 25 degrees C. The heat cycles off and on to maintain the temperature and doesn’t necessarily stay at a steady temperature. The heating element is in the center of the bottom so you’d have to be careful to stir the chocolate constantly. How can I set my pressure cook setting timer to zero. On my Duo Evo Plus unit my timer will only go to :01, or one minute.
When I try to go below :01 it goes directly to 08:00. Is my unit defective?

Some models won’t let you set zero minutes, so you have to set it for 1 minute and then as soon as it reaches pressure and the 1 shows up, press cancel and release the pressure. I don’t know why Instant Pot didn’t make all models consistent.
Hi, bought the duo Evo Plus recently. C8 error code kept coming on when in sauté mode. Did everything right. Kept lid open while sautéing. Set on medium heat not high.
Did not use any other pot but the one it came with. Switched the machine off. Cooled it down. Tried again and again. Gave up! Called
Instant Pot Company. Was asked to return it.
Seems like they haven’t fixed the problem yet. Being reading reviews on many different websites. This seems to be a nagging problem that hasn’t been dealt with. Bought my pot around October 15 , 2020.

I recently purchased the Duo Evo Plus and just love it. The redesigned inner pot with the handles is what sold me on it. (This is my 3rd Instant Pot, I first bought a Duo and I also have an Ultra.) I look forward to trying out all the preset functions. So far I have used Risotto and Bean which worked beautifully. I also agree that using a custom setting for Saute is the way to go.
I did find an error in your review. There is a Quick Cool Tray; it’s on the lid. The mesh-like cover on top of the lid is removable and there is a metal “tray” underneath. You can put ice cubes on that to release the pressure more quickly. (Although I’ve yet to try it.)
I really enjoy your reviews and look forward to trying some of your recipes. I’m always looking for new ways to get the most out of my favorite appliances.

Curious if the Air Fryer lid works with the Duo Evo Plus?
Hi Beth – no, the Instant Pot air fryer lid is not compatible with the Duo Evo Plus. The Mealthy CrispLid will work but is not recommended by Instant Pot.
I am trying to decide whether or not that I want the Evo versus a compatible duo with my current pot. Has the problem with the saute C8 error worked itself out? That sounds concerning. I am comfortable with my Duo Nova and I am not sure the extras are worth the price tag.

Hi Naomi – as far as I know, the problem has not be worked out. It is nice to have two of the same kind so you can switch pots easily better the two. The Evo pot will not work in your Nova.

Hi Renaud! I played with the proofing preset over the weekend. You select the bake button then dial over to Proofing. It allows you to set any time selection in 1 minute increments and temperature in 1 degree F (from 77 to 194).
As for the efficiency, I guess that depends on what you’re used to! I have a gas oven that’s terribly inconsistent in maintaining a temperature (it swings above and below the set temperature by up to 25 degrees). So when I proof I often take a space heater into my laundry room. The proofing setting is definitely more efficient than that, and it’s worked well the few times I’ve made from-scratch breads. 🙂

Thank you for the review. I purchased the DE+ on Wednesday. Used it to sauté and got the C8 error code. I see many others have experienced the same error. Tried calling IP customer support twice. Frustrated with the 35+ minute hold time.
Packed the DE+ up and returned it on Friday.
Hi Tre – sorry, that is frustrating. Despite the problems with the Saute function, it’s still currently my favorite pressure cooker. I just never use the Saute on high anymore.
This is a very good review but I am not excited about instant pot anymore. Just got message that I will soon be receiving my second replacement. I bought the Duo Evo Plus 8 Quart in January 2020. First failure was in March, barely one month of use. The second failure was in May. Same reason, pressure sensor failure. I guess they last about a month.

Sorry I don’t know much about Instant Pots (I’m just about to buy my first one ;-)), but I don’t think you’ll need any specific gear for making Sauerkraut other than some (ideally larger) glass containers.
Since fermenting the cabbage to become Sauerkraut will take a few weeks anyway it probably also wouldn’t be very practical to do it in an Instant Pot, since you wouldn’t be able to use it for anything else in the meantime.

Hello , I want to say that you should note the high number of C8 codes which shut this unit down . It happened to me in the pressure cook mode as well , rendering the “sauté on level 4 solution unworkable . Today (05/15/2020) I called Instant Brands support, explained my C8 error code with a brand new unit in both sauté and Pressure Cook modes , she asked me to take pictures of the error code, various other pictures of the heating element, bottom of the unit sticker, proof of purchase and shipping address. I mentioned to her that it sounds like I am getting another unit . She did not disagree with me.
I think the reviewer of this unit needs to update his/her enthusiastic review of the Duo/Evo multi cooker . It is a great unit that has a fatal error by the name of “C8.” This was a brand new 6 Qt. Evo Duo . Just FYI .

Hi Brooks – it’s frustrating getting the error code. However, the Evo is still the Instant Pot I use most in my kitchen. The Saute function gets hotter than most other Instant Pots so using the Saute function on Custom Level 3 works well for me and I don’t get the C8 error. But I do agree – it’s something Instant Pot needs to fix on future models Evo. The benefits of the Evo – handles that stay cool, the pot doesn’t turn when stirring, being able to use it on the stove, the flat bottom, and improved user interface are well worth not using the Saute function on the higher heat.

I am getting the same error message after I have sautéed with the c8 code. It is so frustrating! Is that a coding error on IP or something we are doing wrong? It’s only my 2nd recipe and I’m already fed up with the device, I don’t want to try anymore

Hi Selena – the manual recommends 1 1/2 cups for the 6 quart and 2 cups for the 8 quart.
I have the DUO EVO PLUS and was getting the C8 error on sauté. I exchanged it for another pot, and all was great for about 3 weeks, no error, until today. Here we go again 🙁 I will try sauté on a lower terms before rerturning for a different model.
I do have a question regarding timer. I had a recipe that asked to pressure for 0 minutes. My timer dial goes from 00:01 to 08:00 instead of 00:00. I left it for the one minute and just stopped it at that point. Is there any way to actually set the timer to “0”. ??
So far I am not so sure the price I paid is worth it given not everything works as it should 🙁
Hi Shelley – it is frustrating to the C8 error but since I’ve been using the Custom selection on saute, I haven’t gotten it again. I don’t know why Instant Pot decided not to have the Evo Plus have a 0 minute setting, but you’re correct, you can only set it for 1 minute. The Duo Evo Plus is my favorite pressure cooker right now and I do think it’s worth the extra money. The flat button, the handles, the release mechanism, the shield over the steam release valve are all great features you won’t get on any other pressure cooker.
I have a question about the settings. I have a IP duo plus and am considering getting the EVO. I cook brown rice for 22 minutes on the manual setting but the preset says 30 minutes. Is it cooking at a lower temperature? The same for steel cut oats, which I cook for 3 min. On manual and the oatmeal setting says 12 min. Thanks.
LOVE my Duo Evo Plus but why in the world would they get rid of the 0-minute pressure cook?
Still hoping to find out the temp of default Keep Warm as well as the 1-6 Keep Warm temps. Any idea if they’ll ever tell us?
I give the Duo Evo Plus an A- just because of the zero minutes. Other than that, pressure cook love.
But customer service gets a D due to being on hold for up to 40 minutes and providing inaccurate info via email from their main email rep who insists that the metal on the lid “is” the Quick Cool Tray. Eventually she said the metal on the lid and the still-not-available tray are *both* called the Quick Cool Tray. Of course that’s nonsense so admitting a mistake is not in her bandwidth.
I’m trying to decide whether to wait until they sell extra inner pots or whether to get another IP for when I want to cook two different items – like a main dish and then a big pot full of veggies.

I actually untill earlier today hadn’t realized that there was some other cooling tray. From the instructions I read with my booklet it did make it sound like removing the plastic cover and placing your ice on top of the lid is how you are meant to do it. So that’s what I have been doing and I love this brilliant idea. Works amazing. Only I put a towel over my ice so it doesn’t make a mess once it melts. (not covering the pressure release)

I’m new to the IP world & I have found your site very helpful. Could you please walk me thru the steps of making yogurt in the Duo Evo Plus? In other IP that have the yogurt function, they have the “boil” step but I can’t find that in the Duo Evo Plus. Help!
Hi Yvette – the instructions for making yogurt in the Duo Evo Plus are on page 48 of the INSTANT POT DUO EVO PLUS USER MANUAL. I have yet to make yogurt in my Duo Evo Plus, but Genene one of the admins of my FB Group and a regular yogurt maker, offered to make yogurt in her Evo Plus tomorrow and will also answer your question if she has additional tips to share.
Yvette & Barbara, This is what I came up with. Hope it makes sense and is of some help. Yogurt in the DUO EVO PLUS
Press Yogurt button then turn the knob to pasteurizing and press Start
Across the top of the display are 3 sets of squares, the first set will begin blinking as it preheats. When that set switches to the next set – wait for the display read HOT and it will quickly switch to the last set and read end.
Open and check the temperature for a reading of 180° (if not, close it back and start all again to reach that temp).
Move the Inner pot to sink to cool down to 110°-115°
Add the starter (temper if it was frozen) Whisk in well.
Move the inner pot back to the IP
Push the Cancel Button, TURN the knob to the ferment word blinks and then press the Start button
See display reads 08:00 and begins the fermenting/incubation stage.
Leave it to incubate for 8 hours and then move the inner pot ( covered ) to the fridge for a minimum of 4 hours then (without scraping the bottom of the inner pot) pour the yogurt into the strainer and place back into the fridge for 8 hours or more.
So many comments I couldn’t read them all, so if this was already said, my apologies.
Hello. I see in your review you said it didn’t come with the quick cool tray? But your picture of the lid shows it. It is a section on the lid. Remove the black plastic piece in the center of the lid top to reveal the quick cool tray where you can put ice on the lid to cook it down quicker. It is not an extra accessory. Hope that helps.
Hi Adam – if you look at the manual https://instantpot.com/wp-content/uploads/2019/11/Duo-Evo-Plus_Full-Manual_20191112_compressed.pdf it says “*QuickCool tray sold separately at store.instantpot.com. Available in January 2020”. You can however as you mentioned, just remove the black plastic piece and put ice on the metal. In fact, I got tired of washing the black plastic piece and leave it in the pantry full time now.

Bought this a couple months ago and I am constantly getting a c8 message when using sauté feature. This means that I’m not using the inner pot….but I’m using the one that it came with. To get it to go away I have to unplug the pot. I got the error 4 times in the middle of making a recipe which equalled an additional 20-25 min of time because I needed the pot to constantly reheat to the right temperature in order to complete my recipe.When using the pressure cooking feature its staying on the preheating mode its not going to cooking mode. Is there any problem in the IP?
Yes, there appears to be a problem with the Saute function on the Duo Evo Plus when used on the high Saute setting. Since I stopped using it and only use Saute / Custom / Level 4 – I haven’t had any C8 error messages.
I get that c8 error all the time too. Seems like a widespread problem.
Hi Heather – since I stopped using Saute High, I don’t get it anymore. Have you tried using Custom Level 4 or 5 instead?

Thank you much more for explain the error codes! Specifically the C8 code. I keep getting that code when I sauté and i even thought my ip was faulty because I have only one ip and I’m using the inner pot that came with it so i was very confused when I got that message.
Even customer support didn’t have an answer for that. So I will try your trick and hopefully I won’t get that error code again.

Hi, thanks for the review! I purchased this unit…my FIRST Instant Pot! Tonight I tried following a recipe which called for “0 minutes” pressure cook.The lowest I was able to select on “custom” was 1 minute. Am I missing something, or has Instant Pot changed this feature on the Evo Plus from previous models? I suppose you could just hit “cancel” once it’s up to pressure, right? Or did Instant Pot change the programming to make 1 minute preferable (what they list in the manual for broccoli)? I would appreciate knowing the opinion of someone with experience in this model as well as previous models to know how to best treat 0 minute recipes!
Hi David – yes, it does look like Instant Pot changed it so you can no longer do zero minutes on this model. One minute is the lowest you can set it even on the broccoli setting. That is frustrating, however what you can do is cancel the cook time as soon as 1 minute shows up on the display and then release the pressure, which is essentially the same thing as cooking it for zero minutes.

Just an FYI: I’m in the UK and bought my Instant Pot Duo Evo Plus as an upgrade on the day of release a month or so ago and it happily does “0” minutes pressure cooking.
Also, while I’m here, I’ve not — yet — had a C8 error and I do a fair bit of sauteing.

I have the Ultra and my mom bought me the EvoPlus for Christmas. I can’t decide whether to keep it or return it. I don’t really understand how the sous vide works. Can you tell me?
Hi Laurie – when cooking sous vide, you seal the food in a bag and then set the temperature you want for the final temperature of the food. It cooks at that temperature and the temperature of the food doesn’t go any higher than the set temperature, so you can cook hold it at that temperature longer and it cooks in its own juices.
I prefer the Evo Plus over the Ultra, but it’s so nice to have two pressure cookers. I would keep it too.

PrSE error displays at the end of preheating phase if add a cup of water and set to 1 min in steam mode. Is it expected ? This is not occuring in other models of instant pot. Is my instany pot faulty ?
I found this on the Instant Pot website – The word “PrSE” is displayed because of excess pressure. | Solution: Press the [Cancel] key and allow the cooker to cool for 60 minutes. If it occurs again, I would definitely contact them.
Steam on this particular model is a non-pressure program. See Page 40 of the full Duo Evo Plus manual. That is a departure from how the Steam has been implemented on most other models. You can use the pressure cooking lid, but with the vent *open.* Download the full manual read pg 40, steps 5 and 6 for how to set the Steam options. The Ultra let you use Steam either pressurized or not, and the Max might but I’m not sure.
Actually, Steam Mode is a Non-Pressure” Mode, so, you did not open the vent, thereby building pressure, therefore, created the alarm situation yourself.
The Ultra will do Sous vide as well, just use the “Ultra” Setting, and set your custom Sous vide temperature.
When will this model come out with extra pots to buy? I like having a few, but have yet to find them sold anywhere.
Hi Karen – I was thinking just the other day that it would be nice to have an extra pot for the Evo Plus. I haven’t seen extra pots yet, but I’ll keep an eye out and post when I do.
The Ultra says you can adjust it for elevations above 3000’. Because I may be taking it up to our cabin, which is st 7100’ I am thinking the Ultra. What company makes the best one and what model? Budget is not part of the equation.
Hi Susie – Instant Pot makes the Ultra, but unless you use the preset buttons extensively, I don’t think you’ll find it necessary to use the automatic adjustment for altitude. I much prefer the features of the Duo Evo Plus. The general rule is to add 5 percent more cook time at 3,000 feet above sea level, 10 percent for 4,000 feet above sea level, and so on, increasing by 5 percent every additional 1,000 feet. So at 7,000 feet just add 25% more cook time. Example 30 minutes x .25 = a cook time of 37.5 minutes – round it up to 38 minutes.

I am conflicted between the 6 quart Ultra and Duo Evo Plus. I am wondering about the different cooking options both of them have to offer. On the Ultra, I see options for Multigrain, Sterilize etc which I do not see on the Duo Evo Plus Front. However, I read that Duo Evo Plus has more features/options than the Ultra. So, are these options in the Ultra which show front and center are in the sub-menus in the Duo Evo Plus? Also, I am new to the Instant Pot world. So, I want to get the better one of the two, based on the functionality and the number of options each one provides. Would love to get your input.
Based on the older comments, seems Evo Plus is preferred over Ultra. But then, I wanted to bring up my specific questions.

Hi Neha – I would recommend the Duo Evo Plus over the Ultra. Yes, the Duo Evo Plus has tons of options in the submenus. Although I rarely use any of the submenus. You can pressure cook almost everything just using the pressure cook function and high pressure.
I love the evo plus. First bought the 6 qt and after using it once knew I had to get the 8 qt. My ultra has been replaced by this one as my favorite!

Hi – The Duo Evo Plus is my first pressure cooker and Iv’e used it 3-4 times a week for the last month-and-a-half! I’ve never enjoyed cooking, and we’d get carry-out food for most dinners, some healthy, some not. So it’s been transformative. I so appreciate how helpful you’ve been, and enjoy one of your cookbooks too.
One question: I’ve done an on-line search in the manual for “keep warm,” and despite the 36 times that It’s referred to, the default keep warm temperature (following pressure cooking) is never mentioned, just the range we can set (77°F–194°). Do you know? I’m sure they’d not err on the low side due to food safety, but it still would be useful to know.
My brand new pot threw a C-8 error and it is the same inner pot that came with the cooker, why would it throw that error?
Hi Michael – my husband was sauteing on high heat with ours tonight and we got the C8 error too. I unplugged turned the pot around and it worked fine. Were you sauteing in yours?

Currently using our new pot to saute and had the same issue. After three times of unplugging and restarting after the same error code, I turned the pot around, not knowing if that would help. Unfortunately, I got the same error moments after restarting. I’ve put in a trouble ticket.
Hi Kathryn – since posting this, I have avoided using saute on high and haven’t had the problem again. I use Saute/Custom 4 with no problem.
I havd a question: I’m buying an Instant Pot for my Daughter in Law for Christmas. I have the Ultra and nothing has ever turned out. Should I buy her the Evo?
Hi Laurie – I prefer the Evo over the Ultra and if I was buying it for my daughter-in-law, I would buy the Evo. However, the Ultra is a great pressure cooker and things should be turning out. What seems to be going wrong for you?

I can’t believe my first pressure cooker is coincidentally the Duo Evo Plus. My husband picked it up yesterday and I used it last night for the most wonderful and simple spaghetti with meat sauce. We both were shocked by the flavor and the speed!
Instant Pot = Instant Addict. In the 1960s my mother would make an incredible beef stew in her pressure cooker with NO gravy – just beef, potatoes, carrots and celery, The veggies/potatoes seemed to just be glazed, no liquid. I think I remember she first sautéed the beef. If anyone has any ideas how to make such a stew I’d be forever in your debt!
Hi Beth – you’re going to love the Duo Evo Plus. I’m glad your first meal was a big hit. I wonder if she pressure cooked the beef as in this recipe https://www.pressurecookingtoday.com/beef-stew-in-the-pressure-cooker/ and then cooked the meat and the veggies with the lid off to reduce the liquid to a thick glaze.

Love the instant Pot. 💜 had it for three years, every meal has turned out delicious. It’s been well worth the money!
We grew up having presto stove top pressure cook meals. Quit using that long ago as it was hand me down ww2 era one that my family had used as their only pot in the house to cook with when the war dept called for people to turn in cookware etc to help in the war effort.
Unfortunately I can’t use it while troubleshooting the C6 error.
It’s time to upgrade to the new exciting Evo Plus !

Hi Janet – an 11 quart is a big one. You’ll need to increase the liquid in most recipes when using the 11 quart, since most recipes are created using a 6 quart pressure cooker, I would double many recipes.

I have the 6 qt and had planned to upgrade to the model that does sous vide. I’m definitely upgrading now. I used my old stovetop PC but eventually switched to the IP-PC. I didn’t eject you use it soooo frequently but now I can’t imagine cooking without it!

I have had my Instant Pot for 3 years and love it. The only interest I would have in this new one is the flat bottom. I would be interested in one that had a timer to set to let me know the NPR is done!

I just love my 6 qt. Insta pot. Use it a lot, Even made a couple of cheese cakes for my husband. It’s convenient and so easy to use. I’m always on the search for more recipes to make in it.
I have a dial model and one without. The dial is harder to use but I definitely like the display so you know what is happening. I don’t like the idea of an attached cord. I think the handles sound good. The pressure release sounds good as well. I like that my model automatically sets the vent like this one has. I think all models should come with detailed instructions. I know too many people who have let them sit in boxes because of poor instructions and fear of using them. I don’t think you should have to go online for things Also not giving the accessories as before is not a good idea. By the way, I use the measuring cup all the time for rice and store it in my rice container. These are not inexpensive appliances in general but I wouldn’t be without the two that I have. I don’t think this has anything that makes me want to go for three. I keep wondering about that crisper lid I see advertised. Thanks for the great review.

Thank you for a wonderful review Jennifer. This Instant Pot looks very interesting to me. I AM a fan of the “undetachable” cord so this will not pose a problem for me. I never liked the ability of the cord coming loose from the pot and interfering with the pot’s pressure. I look forward to giving this new Instant Pot a try.
Sorry, I forgot to ask in my previous post. Does this model have the time delay feature? I use that every day for my oatmeal to be ready when I wake up. It is one of the best features there is. I use it also for potatoes and rice. Thanks again!
It does have a delay start button next to the dial.
Great review. I already own three of the ultra model. Looks like they have taken some good features from both models and combined them. You mentioned the ability to now cook on your stovetop with the new inner pot. Did you try this and if so how did it work? I love the new handles. I might have to purchase two of these new ones for house warming gifts! Thanks again for the review and letting us know where they are available to purchase.

I’m not really impressed with this new IP. It really sounds much more complicated than my duo. For instance, the solution to the “burn” problem is way too complicated, removing the food??? It appears the redesign has eliminated the ability to rest the cover in the “slots” on either side of the pot. They don’t include the manual with the pot????!!!! How cheap! I, for one, don’t think the “upgrades” do any more than complicate the use of the IP. Won’t purchase it. Love my regular duo. But thank you for the review.
Hi Geri – I didn’t find it significantly more complicated. I think they were just expanding on the way to resolve the burn notice – if you can resolve it without removing the food, the same as before, then do that.
They have improved the slots for holding the lid. They are on either side but further back so they’re more out of the way. We’ll update the post to mention that. However, if you’re happy with your Duo, then really that’s all that matters and definitely no need to upgrade.
