Barbara and Jennifer from Pressure Cooking Today

About Barbara

Like many of you, I’m a busy mom and under pressure to get delicious, healthy meals on the table fast. Now, thanks to my electric pressure cooker, mealtime has never been quicker or easier.

Growing up, my mom used an old-fashioned stovetop pressure cooker to cook a pot roast every Sunday. I grew up knowing meals made in a pressure cooker were fast and delicious.

Many years later, after becoming a mom myself, I began hearing about electric pressure cookers and saw all the safety features. I remembered the home-cooked dinners of my childhood and knew I had to try one.

Honestly, it was love at first sight. I really did fall in love with my electric pressure cooker after just one recipe. It was so quick and easy to make meals in the pressure cooker, and I loved having only one pot to wash. And the food tasted great—tender, fall-apart meats; soups that tasted as though they’d simmered for hours; and pasta and rice dishes cooked to perfection.

It’s been so much fun to see so many people embracing pressure cooking, and I have loved getting to know so many of you through email, Facebook, and in person.

About Jennifer

When Barbara first got into pressure cooking, I’ll admit I was totally intimidated. The weird noises and huge jet of steam were unlike any method of cooking I’d encountered. I was so chicken, I used a long wooden spoon to flip the pressure release valve!

However, as soon as I experienced how quick and easy it is to make meals in a pressure cooker, I was hooked!

Mom gave me an Instant Pot of my own, and I’ve never looked back. At this point, I can’t really remember how we made meals without it!

My husband and I have become the on-call support for our friends and family, and we’ve even taught classes to groups and friends.

I look back at my history as a cook—my mom once bought me a timer to wear because I kept burning cookies that I’d start baking and forget about them while they were in an oven—and I can’t help but be grateful for Barbara’s patience and guidance. If I can become a good cook, anyone can!
