Pressure Cooker Lemon Blueberry Steel Cut Oats
My Lemon Blueberry Steel Cut Oats are creamy, lightly sweet, flavored with lemon zest, studded with blueberries and chia seeds, and topped with sliced almonds and a splash of milk. A heart health, delicious way to start the day.
My daughter is in love with my Lemon Blueberry Coffee Cake. It’s a craveable recipe, but she’s trying to cut down on sugar on weekday mornings. So she asked me to create a steel cut oats recipe with the flavors of the coffee cake she craves.
Making Lemon Blueberry Steel Cut Oats in an Instant Pot
I used fresh blueberries when I made these oats, but frozen would work well too. The chia seeds add extra fiber and protein to the oats. I used the zest from 1 lemon, then froze the lemon juice to use in another recipe.
The lemon flavor in this recipe is mild, but really brightens up the flavor of the oatmeal. It’s a nice balance to the sweet juicy blueberries. The almonds add the crunch you get from the coffee cake streusel top. So I think I’ve hit all the right notes, and I’m sure my daughter is going to love this recipe too.
Lemon Blueberry Steel Cut Oats
Ingredients
- 1 tablespoon butter
- 1 cup steel cut oats
- 3 cups water
- 1/2 cup half and half
- 2 tablespoons sugar
- 1 tablespoon lemon zest
- 1/4 teaspoon salt
- 1 cup fresh or frozen blueberries
- 1/4 cup chia seeds
Instructions
Add butter to pressure cooking pot, select Sauté. When butter is melted add the oats and toast, stirring constantly, until they smell nutty, about 3 minutes.
Add water, half and half, sugar, zest, and salt. Select high pressure and set 10 minutes cook time.
When beep sounds, turn off pressure cooker and use a natural pressure release for 10 minutes and then do a quick pressure release to release any remaining pressure. When valve drops carefully remove lid.
Stir oats. Stir in blueberries and chia seeds. Cover and let sit five minutes until oats are desired thickness.
Top with additional blueberries, honey or agave, sliced almonds, and splash of milk.

What would be the cook time with quick cook steel oats?

could you use milk, instead of water and half and half? i seldom have half and half on hand.
Hi Jack – I’d probably use half milk and half water because milk tends to foam in the pressure cooker. Enjoy!
This is so good. Toasting the oats then the addition of fresh lemon zest really adds great flavor. I stay away from sugar so I omitted it. The leftovers will go in the fridge for future meals. It will also make a great midday snack.
Just got an Instapot and this was my first recipe to try! It turned out. I really liked the flavor, but I think I will reduce the sugar in it. Tasted very sweet and I don’t think I would notice it with a bit less sugar since we topped it with honey anyway

OMG! So yummy! I edited mine just a bit…made it with cashew/almond milk! Then I split it into 6 servings in a jumbo muffin time. Placed in freezer over night the I remove and bag individually for work!!

Just finished eating a bowl of this and I am holding myself back from getting more. So delicious and creamy with just the perfect amount of sweetness.
We just had this for breakfast and it was amazing. The only changes I made was that I substituted brown sugar for white sugar & cut back on the amount of Chia seeds. My husband just asked me to make another batch so he can eat it at work this week.

My husband doesn’t like oatmeal. Would this be okay to reheat since it’s too much for one person?
Hi Chris – It reheats well. It will thicken as it cools, so you may want to add more liquid. It also freezes very well. I froze two servings of it and enjoyed it the following week. My husband isn’t a big oatmeal lover either.

This looks delicious! I have oatmeal for breakfast pretty much every day, so I’m always looking for new ways to prepare it to mix things up. I’ve added blueberries before (who hasn’t?) but I’ve never tried added slivered almonds, and definitely never tried making it in a pressure cooker. Can’t wait to try this!
