Pressure Cooker Almond Joy Steel Cut Oats
Start your day with a little chocolate! This heart-healthy, creamy, delicious Pressure Cooker Almond Joy Steel Cut Oats recipe is quick and easy to prepare. It’s topped with sliced almonds, toasted coconut and mini chocolate chips.
A few weeks ago at my church they passed out a paper with a couple of recipes on it. One of the recipes was for Almond Joy Oatmeal. That recipe was a stove top recipe and used old fashioned oats, but it was the inspiration for this steel cut oats recipe.
Costco recently started selling Toasted Coconut Chips. They’re crispy, sweet and lightly salted. They’re an addicting snack, or a perfect topping for yogurt or ice cream sundaes. They’re also a perfect topping for my Pressure Cooker Almond Joy Steel Cut Oats. If you get a chance, pick up a bag and give them a try. Or, if you can’t find them, use toasted sweetened shredded coconut instead.
In addition to the toasted coconut chips, I added sliced almonds and mini chocolate chips. I used semi-sweet chocolate chips because I had some in the pantry, but my husband said if it’s Almond Joy oatmeal I should have used milk chocolate.
I was going to make the oatmeal with almond milk and add coconut flavoring, but when I went shopping my store had a combination almond coconut milk. So I used that instead. It was a great addition and I felt like the coconut flavor really stood out.
If you love the Almond Joy candy bar and steel cut oats, I think you’ll be crazy about this breakfast. I know I was.
Making Almond Joy Steel Cut Oats in an Instant Pot
Pressure Cooker Almond Joy Steel Cut Oats
Ingredients
- 1 tablespoon butter
- 1 cup steel cut oats
- 3 1/2 cups almond coconut milk
- 1/4 teaspoon salt
- 1/4 cup toasted shredded coconut
- 1/4 cup mini chocolate chips
- 1/4 cup sliced almonds.
Instructions
Add butter to pressure cooking pot, select Sauté. When butter is melted add the oats and toast, stirring constantly, until they smell nutty, about 3 minutes.
Add milk and salt. Select high pressure and set 10 minutes cook time.
When beep sounds, turn off pressure cooker and use a natural pressure release for 10 minutes and then do a quick pressure release to release any remaining pressure. When valve drops carefully remove lid.
Stir oats. Cover and let sit five minutes until oats are desired thickness.
Top with shredded coconut, chocolate chips, sliced almonds, and splash of milk.

Attempting this recipe right now in my 6 qt instant pot. First round, I got the burn message after it had only been at pressure for 1 minute. Burned film coating the bottom, but still plenty of liquid in the pot. I followed the recipe, only subbing skim milk and a splash of real coconut extract since that’s what I have. I’m trying again after toasting the oats in a different pot on the burner, thinking the bottom of the pot was too hot the first time, but that defeats the purpose. Any ideas?

Have you ever tried doing a single serving? What would the cook time be? Sounds great!
Thanks Jenna – you could divide the recipe by 4 for a single serving and the cook time would be the same. However, steel cut oats freeze well and I usually freeze in individual servings if I have more than I need. Enjoy!
This was my first time cooking steel cut oats in my instant pot. Loved them! I was able to find unsweetened coconut milk in a box, and that’s what I used. The oats were cooked perfectly! Have you ever tried to double this recipe? If so, how long would you recommend cooking them? Thanks for some great recipes!
Thanks Aubri – glad you’re enjoying my recipes! You can double the recipe without changing the cook time. However, you may need a longer natural pressure release so no oats foam out of the valve when you release the pressure.
I just recently got my instant pot and attempted to make Scottish oats in it, but got some scorching on the bottom. I used half water/half whole milk and did 3 min on manual, keep warm for 10 and then released pressure… Any tips? Was it the milk? Thanks!
Hi Errign – you should be okay with half water and half milk. I wonder about the type of oats you used, and whether or not you had a proper seal on you IP. Did you see a lot of steam escaping during cooking? How much water/milk did you use?
I used 1 cup Scottish oats (partially ground steel cut from bobs red mill) to 3 total cups liquid (half milk, half water). I wasn’t watching it the whole time, but I didn’t notice a lot of steam when I did glance at it…
Was your liquid mostly gone? Perhaps you need a shorter cook time and more liquid? Were the oats cooked to your liking?
The liquid was basically all gone. They were cooked well, just scorched on the bottom. I’ll have to try with more liquid or shorter cook time. Thanks!
Yum, dessert, for breakfast! I had TJs quick cook steel cut oats; so, I modified the recipe, as such. I used 1.5 cups of water, and 1.5 cups of almond milk, and cooked for 2 min; then, qpr, after 5 min. I toasted coconut and sliced almonds, together, and added mini chocolate chips to the hot oats. Perfection! Thank you!
