Instant Pot Meal Plan: 7 Days of Double Duty Dinners
This recipe for Easy Instant Pot Chicken Taco Filling made in your pressure cooker is so versatile! It is great for tacos, but it also works fabulously for taco salads, enchiladas, burritos, and more!
It’s as easy as chopping an onion, tossing in a can of tomatoes and spices, and adding in some chicken breasts. Best of all, you can even use frozen chicken!
It makes a big batch, so take the leftovers and package them in a ziptop freezer bag to go into the freezer. Make sure to label your bag and include the date so you’ll know what you’re pulling out later.
Making bean soup in the pressure cooker takes only about one-third the time that it normally takes on the stove. And using dry beans instead of canned beans gives you a much richer flavor profile.
This Instant Pot 15 Bean Soup recipe includes both a quick soak and a no soak option for your beans, meaning you can get dinner on the table faster.
Freeze leftover soup in individual serving sizes, about 1 ½ cups each, in ziptop freezer bags or containers for up to 3 months. Remember to label what is in your bag or container!
A hearty meal that is warm and filling, this recipe for Sirloin Tips in Gravy made in your pressure cooker could not be easier.
Be sure to brown your meat in your pressure cooker as it adds amazing flavor to your gravy! Serve this over mashed potatoes or egg noodles.
Divide leftovers into 2-cup portions in ziptop freezer bags or containers to pull out for future meals.
This Instant Pot Spicy Chicken Soup made in your Instant Pot or pressure cooker is a delicious chicken taco soup loaded with black beans, corn, tomatoes, and salsa.
It makes a great dump-and-go recipe for busy nights, and you can even use frozen chicken!
The recipe is very flexible, and you can customize to your family’s tastes. It makes about 5 quarts of soup, so there is plenty extra.
Freeze leftover soup in 1½ cup portions in ziptop freezer bags, laid flat in your freezer to freeze. Then once frozen, stand the bags upright to save room!
These tender and juicy Green Chile Pork Carnitas taste like you spent hours slaving away in the kitchen, but they really only take minutes to make in your pressure cooker!
This recipe makes a wonderfully large amount of sauce, so feel free to cook a slightly bigger pork roast and freeze both the meat and sauce.
Or freeze just the extra sauce and use it later with other protein options like shredded beef or chicken. It also makes a terrific sauce for pouring over enchiladas or dipping quesadillas in!
This hearty Instant Pot Meatball Soup recipe made in a pressure cooker comes from Candi over at Make-Ahead Meal Mom.
You can actually use this as a freezer meal to prepare in advance, or make up a batch and freeze the leftovers as a double-duty meal!
Use pre-frozen meatballs to put this dinner together in mere minutes. Leftovers freeze great, and if you freeze individual portions of 1 ½ to 2 cups in ziptop freezer bags or freezer-safe containers, you can use them for easy weekday lunches.
This easy Instant Pot Beef and Broccoli recipe is better than take-out and comes together in just about 30 minutes!
Tender, thin-sliced beef is cooked in a rich sauce that is both salty and sweet.
Cooking the beef and broccoli separately and then serving together at the end helps to prevent mushy broccoli, and it also makes it easy to freeze any beef leftovers for another meal.
Who doesn’t love a good Instant Pot Key Lime Pie with its tart, creamy filling nestled in a graham cracker crust?
While I doubt there will actually be any leftovers, you can freeze this pie if you need to. Or make it ahead and freeze to pull out another time or maybe when company comes.
But let’s be honest, with the bright fresh flavors of the key lime (or just regular lime if you can’t find key limes in your area right now), I doubt that any of this pie will ever see the inside of your freezer because it will be gone before you can blink! It really is THAT good!
