How to Make Instant Pot Citrus Monkey Bread

This Instant Pot Citrus Monkey Bread recipe will work in any brand of electric pressure cooker, including the Instant PotNinja Foodi, or Power Pressure Cooker XL

This is an overnight bread. The day before you want to serve your citrus monkey bread, you’ll need to defrost your dinner rolls. Then shape the loaf in a bundt pan. This needs to rise overnight in the fridge. 

The next morning, you can “bake” the monkey bread in your Instant Pot / pressure cooker. You’ll need a trivet and a sling for this. If you don’t have a reusable sling, see my guide to making a foil sling for Instant Pot baking

Citrus Glaze

While the monkey bread cooks in the Instant Pot, you can make the simple citrus glaze. Make sure to use powdered sugar, not granulated. Otherwise, your glaze will be grainy and heavy, not light and smooth. 

If you don’t have both lemons and oranges, you can substitute one for the other. For example, use all lemon juice or all orange juice. Of course, this will slightly affect the flavor. 

If your glaze is a bit too thick to pour over the monkey bread, add more citrus juice to reach a pourable texture. Likewise, if it’s too thin, add more powdered sugar, a bit at a time, to find the right consistency.

Broiling the Monkey Bread

If you like a golden kiss on the tops of the citrus monkey bread, you can broil it briefly after pressure cooking. This should take about 3 to 5 minutes, so be sure to keep a close eye on the loaf under the broiler to prevent burning.

Storage

Store leftover citrus monkey bread in an airtight container or tightly wrapped in plastic on the counter for up to two days. It’s best the day it’s made.

Instant Pot Citrus Monkey Bread

This easy make-ahead Instant Pot Monkey Bread has a bright citrus glaze and starts with frozen dinner rolls. 6

Ingredients

FOR MONKEY BREAD

  • 16 frozen unbaked white yeast dinner rolls
  • 1/2 cup granulated sugar
  • Finely grated zest from 1 large lemon and 1 large orange
  • 1/4 cup unsalted butter

FOR GLAZE

  • 1/2 cup powdered sugar
  • 2 teaspoon lemon juice
  • 1 teaspoon orange juice

Instructions

To Make Monkey Bread: The night before, place the frozen rolls in a ziplock bag and thaw at room temperature for 60 to 90 minutes. Do not allow to rise. When thawed, cut each roll in half.

Spray a half-size Bundt pan with nonstick cooking spray. In a small bowl, mix together sugar and lemon zest and orange zest. Melt butter in second small bowl. Dip roll halves in butter, then roll in sugar mixture until coated. Place rolls in the Bundt pan, staggering the dough balls to build layers. Cover the Bundt pan with foil and place in the refrigerator overnight.

In the morning, remove the Bundt pan from the refrigerator. Pour 1 cup water into the cooking pot and place a trivet in the bottom. Carefully center the filled pan on a sling and use the sling to lower the pan into the cooking pot. Lock the lid in place. Select High Pressure and 25 minutes cook time.

When the cook time ends, turn off the pressure cooker. Let the pressure release naturally for 5 minutes, then finish with a quick pressure release. When the valve drops, carefully remove lid.

Use the sling to transfer pan to a wire rack. Invert onto a serving plate.

If desired, place the monkey bread on a foil-lined baking sheet. Preheat the broiler and cook until the tops of the rolls are golden brown, about 3 to 5 minutes. Remove from the oven. 

To Make the Glaze: Whisk powdered sugar, lemon juice and orange juice in small bowl until smooth. Add more powdered sugar or juice, as necessary, until glaze reaches the correct consistency. Drizzle glaze over the top and sides of the bread. Serve warm.
