How to Make Taco Rice in the Instant Pot
This Taco Rice recipe will work in any brand of electric pressure cooker, including the Instant Pot, Ninja Foodi, or Power Pressure Cooker XL.
Aside from sauteeing the ground beef in the instant pot, this is an easy dump-and-go meal. Then, simply add the remaining ingredients (liquid and aromatics), lock the lid in place and cook away!
I recommend using long-grain white rice for this recipe. It absorbs the taco seasonings and won’t become mushy during pressure cooking.

It’s easy to serve this flavorful Instant Pot rice in a variety of ways. You can serve it up straight out of the pressure cooker, or try it:

Adjusting the Spice Level
It’s easy to add or reduce the heat in this recipe. If you’d like to tamper down the spice level, be sure to remove the seeds from the jalapenos. Cutting the peppers very small also helps avoid any majorly spicy bites.
On the other hand, if you love spice, feel free to leave the seeds in your peppers!

Instant Pot Taco Rice
Instant Pot Taco Rice is full of chili powder, ground beef, and jalapenos for a fast and flavorful weeknight dinner recipe.
Ingredients
- 1 tablespoon oil
- 1 pound ground beef
- 1 yellow onion, diced
- 1 jalapeño pepper, seeded and diced
- ½ red bell pepper, seeded and diced
- 2 cups reduced-sodium chicken broth
- 1½ cups long-grain white rice
- 1 teaspoon chili powder
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon garlic powder
- Toppings: diced tomatoes, avocado, cilantro, shredded cheese, sour cream
Instructions
Select Sauté and heat the oil in the pressure cooking pot. Add the ground beef, onion, jalapeño, and bell pepper to the pressure cooking pot and cook, breaking the meat into small pieces, until browned and the veggies are softened, about 4-6 minutes.
Stir in the chicken broth, rice, chili powder, salt, pepper, and garlic powder. Lock the lid in place. Select High Pressure and 4 minutes cook time.
When the cook time ends, turn off the pressure cooker. Let the pressure release naturally for 10 minutes and finish with a quick pressure release. When the valve drops, carefully remove the lid. Fluff the rice with a fork.
Garnish with your favorite taco toppings.

Can brown rice be substituted for the white rice? If so, would the liquid and cook time stay the same as written? Thanx for your help.
Hi Cheryl – I haven’t tried it with brown rice, but it should work well. I’d use a 22 minute cook time and add an additional 1/2 cup of broth. Let me know how it goes if you try it.
