How to Cook Artichokes in an Instant Pot

I’ve never cooked artichokes at home, so I’m looking forward to trying Kalyn’s recipe. To cook artichokes in the Cuisinart Electric Pressure Cooker select High Pressure and set the timer for 8 minutes. When the timer beeps, use the Quick Release Method. When all of the steam is released carefully remove the lid. Serve immediately.

I love artichokes and have cooked them in a pressure cooker since I first used my mom’s old stove top one in the 1960’s. I drizzle a little bit of canola or olive oil on the top of the washed artichoke and then sprinkle about a 1/2 teaspoon garlic powder over it. Add about 1 cup water to the pot and let her cook for about 20 minutes. Yum with either mayonnaise or butter. However with my new Electric Pressure Cooker – it’s so much safer. I will have to try your’s with the lemon juice. I also do cut the big artichokes in half.
Barbara! I love your new website. I have never even thought about cooking an artichoke in a pressure cooker. This brings back the memories of the my grandmother’s pressure cooker whistling and rattling away in her cheery kitchen.

I’ve never cooked an artichoke either. It seems so intimidating. I bought one a while back for $1.00 and just never used it. Left it sitting in the fridge until it went bad. lol. It may have helped if I had a plan for it!! 🙂

Sounds yummy. I have steamed artichokes before, but never seasoned the water. I used lemon to keep them from turning brown. I can’t wait to try this. I am gathering up the nerve to pressure cook. You are inspiring me.
