Pressure Cooker Black Bean Sweet Potato Quinoa Chicken Chili
A hearty, chili loaded with good for you ingredients – colorful sweet potatoes, protein rich quinoa, fiber rich black beans, and antioxidant rich tomatoes.
This Black Bean Sweet Potato Quinoa Chicken Chili recipe is a pressure cooker version of Gaby, What’s Gaby Cooking, Black Bean Sweet Potato Chili. I pinned Gaby’s recipe and my pin has been repinned over 5,000 times. Someone even commented that this was the “best vegan chili I’ve ever made!!!” I decided I’d better give her chili a try too.
Making Black Bean Sweet Potato Quinoa Chicken Chili in an Instant Pot
In addition to changing it in to a pressure cooker recipe, I also added chicken. I knew my family would like it better if it had a little meat it in. However, feel free to omit the meat and use vegetable stock if you want to keep it vegetarian. If you like your chili a little more mild, you might want to cut the chili powder in half.
My family enjoyed this chili, although they wondered if it should be called a soup instead of chili because of the addition of quinoa and the thin broth. There’s a lot of liquid in this chili, but the quinoa will soak up the broth as it sits. You could also make a cornstarch slurry and thicken the broth at the end of the cook time if you’d rather.
Black Bean Sweet Potato Quinoa Chicken Chili
Ingredients
- 1 tablespoon olive oil
- 1 sweet potato, peeled and diced
- 1 large onion, diced
- 4 cloves garlic, minced or pressed
- 2 tablespoons chili powder
- 1/2 teaspoon ground chipotle pepper
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 3 cups chicken broth or vegetable stock
- 1 15-ounce cans black beans, rinsed
- 1 14.5-ounce can diced tomatoes
- 1/2 cup quinoa
- 2 large boneless skinless chicken breast, uncooked and diced
- 1 tablespoon lime juice
- avocado, cilantro, sour cream, cheese, optional
Instructions
Select Saute and add oil to the pressure cooker pot. When oil is hot, add the sweet potato and onion and cook until the onion is softened, about 5 minutes. Add the garlic and cook 1 minute more.
Stir in chili powder, chipotle, cumin and salt. Add chicken broth, black beans, tomatoes, quinoa, and chicken and stir to combine.
Lock lid in place, select High Pressure and 4 minutes cook time and start. When timer beeps, turn off pressure cooker, wait 5 minutes, then do a quick pressure release.
Stir in the lime juice and add additional salt as needed. If necessary, let chili rest unplugged for several minutes uncovered and the quinoa will absorb additional liquid.
Garnish individual bowls with avocado, cilantro, sour cream or shredded cheese.

Has anyone tried switching the quinoa out with rice before?

You can sub rice for quinoa and vice versa in anything. Same cook time!

Just made this recipe and it was so spicy that my mouth felt like it was burning. So just a note to people who don’t like super spicy food I would eliminate the chipotle pepper and add the chili powder starting with 1 tablespoon and add more to desired level of spiciness.
Hi Janice – sorry it was too spicy for you. The chipotle pepper adds more smokiness than heat I think, but definitely reduce the chili powder if you don’t like spicy.
Hi Barbara, this is one of at least half a dozen of your recipes that is in constant rotation at our house! If you (or any of your readers) live close to a Trader Joes, I *highly* recommend sprinkling some of their Chile Lime Seasoning Blend on top – it’s a perfect match.

If I use chicken thighs, should I cook for 8 minutes? Also, if I’m omitting the tomatoes, think I should add more liquid? Thanks for your suggestions and can’t wait to try it!

Could this recipe be done with dry beans (soaked overnight)? How would that change the liquid amounts and cooking time? Would love to try it tomorrow but the only ingredient we don’t have is the can of beans.

This was awesome! I made it without chicken and I used a can of fire roasted tomatoes instead of regular tomatoes. In lieu of salt I used fish sauce (you can’t taste the fishiness). This recipe is definitely a keeper.

I want to double this recipe and will be using 4 boneless skinless chicken breast. Do I need to double the time to cook? Thank you. In fact I will need to always double these recipes because I have a big family to cook for or for potlucks, do I need to double the cook time for other recipes? How will I know? I’ve been also using the slow cooker recipes and one of the slow cooker pot roast recipes I used the potatoes and carrots were still at little under cooked and I added about 2 hours to the time. Hi Terry – generally in the pressure cooker you do not need to increase the cook time when you increase the volume. If the size (thickness) of the meat is larger, a 5 lb. roast instead of a 2 lb. roast, then you do need to increase the cook time. Some recipes you can’t double – anything that foams, pasta, steel cut oats, applesauce, you don’t want to fill the pot more than half full. I don’t really ever use the slow cook function, so I’m not much help with that.

This will be my first recipe to try in my new Instant Pot. I was wondering do I cut the chicken up into bite size pieces or just put them in whole. If in whole do you cut or shred them after it is done.

Hi Nick – sorry I’m slow to respond. No, you don’t need to increase the cook time when doubling this recipe in the pressure cooker. It will take longer to come to pressure, but that isn’t figured in the cook time. Just be sure and not exceed the maximum fill line. Enjoy!
Holy moly….I just had to let you know that this was my second recipe in my Instant Pot and we thought we had died and gone to heaven. It was absolutely fabulous. I couldn’t find a sweet potato locally so we used a few tiny little potatoes. I think I like this better than traditional chili. It was the first time I have ever used quinoa and even my picky husband went back for seconds.

Stove top pressures cookers generally reach a higher PSI and may cook slightly faster, but I wouldn’t worry too much about it on most recipes unless it’s a super quick time like vegetables or a long cook time. Enjoy!

Hi Deloris – I have a large Costco size bag of quinoa that says it’s pre-washed, so I didn’t rinse it. If yours isn’t, you’ll want rinse it.
