Making\u00a0Braised Chicken with Capers and Parsley in an Instant Pot<\/h2>\n

The recipe is from Cafe Luce in Portland, Oregon, and was published in Bon Appetit<\/a> magazine. Pat’s\u00a0made the recipe many times and has shared it with many family members and friends.<\/p>\n

The original recipe requires a 1 1\/2 hour braise, so Pat\u00a0decided to adapt it to the pressure cooker and was wowed by the difference pressure cooking made.<\/p>\n

Use an\u00a0instant-read thermometer<\/a>\u00a0to verify each chicken breast is at least 165\u00b0F in the thickest part of the breast after cooking.<\/p>\n

It was great – incredibly moist and tender and more flavorful. From now on I will always prepare this chicken recipe in the pressure cooker.<\/p><\/blockquote>\n
