Instant Pot Cheesecake Bites<\/em><\/b> are the perfect make-ahead holiday treat! Smooth, creamy cheesecake balls dipped into rich milk chocolate and decorated with your favorite toppings.<\/em><\/p>\n <\/p>\n My Chocolate Covered Cheesecake Pops<\/a> drizzled with caramel and white chocolate is one of my most popular recipes on Barbara Bakes<\/a>. <\/p>\n I\u2019ve made it even easier by converting it to an easy Instant Pot cheesecake recipe<\/a>. Cheesecake<\/a> is one of my favorite things to make in the pressure cooker. It’s super<\/em> easy, and it comes out silky smooth. <\/p>\n I guarantee these bite-sized treats will be a big hit at your holiday party!<\/b><\/p>\n <\/p>\n This Instant Pot Cheesecake Bites recipe will work in any brand of electric pressure cooker, including the Instant Pot, Ninja Foodi, or Mealthy MultiPot. <\/p>\n Cheesecake pops are the perfect make-ahead dessert! <\/b>Because these cheesecake pops use a crustless Instant Pot cheesecake recipe, they come together quick.<\/p>\n <\/p>\n Making Instant Pot cheesecake Bites is a three step process:<\/p>\n The hands-on time for each step is pretty minimal, and the end result is pretty much irresistible! <\/p>\n <\/p>\n I used a #30 cookie scoop<\/a> (about 2 tablespoons) to make the Instant Pot cheesecake bites. You’ll get 18 bites from a 7-inch pressure cooker cheesecake. <\/p>\n For me, this is enough cheesecake that one bite is satisfying without being too much.<\/b><\/p>\n However, if you want to make 24 smaller bites, you can use a #40 scoop<\/a> (about the same as a heaping tablespoon). <\/p>\n <\/p>\n Choose a good chocolate for this cheesecake pops recipe! The chocolate you use has a big impact on the overall flavor!<\/b> <\/p>\n If possible, I recommend using a chocolate specifically made for dipping. Unlike chocolate chips or candy bars, compound chocolates<\/a> and melting chocolates<\/a> are still made with higher-end cocoa powder or cocoa butter. You can definitely taste the difference!<\/p>\n You can find melting chocolates and wafers at specialty baking stores<\/a>, craft stores<\/a>, and even some big box stores<\/a> and grocery stores. <\/p>\n <\/p>\n My family prefers milk chocolate, so I like to use Guittard Old Dutch Milk Chocolate Wafers<\/a>. This makes for a rich, sweet complement to the smooth and creamy cheesecake. When chilled, you get a nice crunch from the chocolate shell. <\/p>\n If you want the finished product to be a little more complex and less sweet, I\u2019d recommend a bittersweet or dark chocolate. <\/p>\n In a pinch, you could also use chocolate chips or candy melts.<\/p>\n <\/p>\n If a shiny coating and crisp snap is important to you when you bite into the chocolate, you\u2019ll want to make sure to temper your chocolate<\/a>. I\u2019ve included instructions for traditional double-boiler tempering, but at home I generally follow Cook\u2019s Illustrated\u2019s easy microwave method for tempering chocolate<\/a>. <\/p>\n No matter which method you use, you want to make sure your melted chocolate doesn\u2019t get too hot\u2014definitely below 130\u00b0F for bittersweet chocolate and below 115\u00b0F for milk chocolate.<\/p>\n <\/p>\n I prefer to use 6-inch lollipop sticks<\/a> or longer when I want to place the bottom of the sticks in a cake pop stand<\/a> so the dipping chocolate stays uniformly round.
