Hello Barbara, I’m quite sure that I followed the directions exactly. I even had my husband check behind me just because he was standing there.  I used a 6 inch springform pan and put it in a silicon trivet/sling.  I did not use the Instant Pot brand. My Cuisinart 6 quart electric cooker has always been on target with the times that you have put on your recipes. Never had a problem before with anything that we cooked.

It came out just in time for Christmas when we always make goodies for our neighbors. I followed the recipe EXACTLY and the cheesecake looked perfect when it came out. I was very very excited and had purchased all my decorations for them. I had a  silicon scoop that makes perfect meatballs  and expected to have the same perfect little cheesecake balls
The first one did not come out exactly right so I messed with it and tried to roll it into a ball with my hands.  When I put it on the parchment paper and started to put the lollipop stick in, it fell apart !  I made three more balls and each one did the same thing, splitting apart as I placed it on the parchment and totally falling apart when I tried to insert the stick.  This cheesecake was so dried out that after I gave up on my attempts to make the balls I could not even eat it.  Obviously it was over cooked.  What is a solution??
