I initially did not have enough chicken so Instant Potted 6 chicken thighs (8 minutes with homemade bone broth).

I used bone broth I made with the instant pot with left over chicken bones as the broth. Once we finished the cooking portion with the rice, dumped in shredded chicken thighs along with diced zucchini. If I had mushrooms I would have added that

This was really flavorful for us and we’ll be doing again —- with mushrooms. Super simple, great flavor.

(Not a criticism, a genuine question. Wondering if it would change the texture of the rice … or if you would need mite water to cook it that way?

160 g is about 2/3 cup. 1 cup of rice is 230g.
